Every letter, space, number and punctuation mark counts. What changes the limit is the kind of characters you use.

These characters stay in standard mode but count as two characters each: ^ { } \ [ ] ~ | €. Worth knowing if you are close to the limit.
One emoji switches the whole message to Unicode, where an SMS holds 70 characters instead of 160. A 150-character message that was 1 SMS becomes 3.
Word and phone keyboards often turn ' and " into curly versions (’ “ ”) and replace -- with a long dash. They look nicer but force Unicode. The calculator can swap them for plain ones with one click.
